I felt rather festive this morning so I decided to whip up these refined sugar-free raw truffles. They’re so easy to make and so delicious!
Makes approx 20 truffles
3 tbsp coconut oil
4 tbsp cacao powder
2 tbsp maple syrup
40g desiccated coconut
130g pitted dates
Finely chop the dates by hand or in a food processor.
If the coconut oil isn’t soft already, soften it over a gentle heat in a pan. Then mix the cacao and maple syrup in with the coconut oil.
Add the mashed dates and coconut.
Shape into balls and roll in more desiccated coconut to coat them. Store in the fridge.
