I’ve been experimenting with porridge a lot lately, and I had to find a porridge for the sweet-toothed amongst you! If, like my sister, you can’t face savoury porridge, then this one is for you! The colour is so pretty and the aroma of this porridge cooking is amazing- like baking crumble!
Serves 1
Ingredients:
40g porridge oats
5 strawberries
40ml coconut milk
40ml water
Coconut flakes & desiccated coconut, to serve
Top with natural unsweetened yoghurt, hemp seeds or nuts for protein.
Method:
1.) Chop 4 of the strawberries and add to a blender along with the coconut milk and water. Pulse until smooth.
2.) Add to the pan along with the oats and bring to the boil. Reduce the heat and simmer until all of the liquid has been absorbed (about 10 minutes).
3.) Dice the remaining strawberry to top the porridge with, along with the desiccated coconut and flakes.

Fruit in their oats is my kids favorite way to eat porridge!! I like both sweet and savory porridge, but tend to stick to raw smoothie bowls 😊 yours looks delicious!!
