Baked banana and cinnamon porridge

This is like eating crumble for breakfast; it’s so warming on a frosty morning- true comfort food.

Serves 1

Ingredients:

40g porridge oats
1/2 tsp bicarbonate of soda
1 tsp ground cinnamon
1/4tsp ground allspice
1/4tsp ground ginger
150ml almond milk
1 banana
Peanut butter, to top

Method:
Preheat the oven to 200°C (180°C fan)

Mix everything except for the banana together.

Then chop the banana into slices and mix these in with the other ingredients (or mash, if you prefer).

Pour it into an ovenproof ramekin and bake for 15-20 minutes until golden and crispy on top and slightly gooey on the inside.

Serve with the peanut butter on top. Enjoy!
