Healthy “baked” beans

Shop-bought baked beans usually contain preservatives and added sugar and salt, but these homemade ones are free from all of these! They make a fantastic breakfast along with some sliced avocado or eggs.

Ingredients:
1 tsp coconut oil
1 onion
1 garlic clove
Balsamic vinegar
1 tin chopped tomatoes
1 tin cannelini beans
Pinch dried herbs
Black pepper

Method:
Melt the coconut oil in a saucepan, then chop the onion and garlic and sauté until soft and clear. Add the tomato sauce and the beans, then a dash of balsamic, pepper and herbs. Allow to simmer for 15 minutes to allow some liquid to evaporate and create a thicker sauce.

– to sneak in extra veggies, make my Homemade tomato sauce (which contains grated carrots) or add some spinach or mushrooms to it.
