Hope you all had a lovely Christmas and New Year. Sorry for my lack of posts, I haven’t had much time to experiment in the kitchen due to upcoming exams but I will be soon!
I just wanted to share this easy and tasty breakfast idea. Salmon is high in protein and omega 3, so it’s a great power-packed breakfast.
We had some leftover greens from last night’s dinner (green beans and flower sprouts) but you could use Tenderstem broccoli, asparagus or any other skinny green veggie! I simply laid them out on smoked salmon fillets and wrapped them up, seasoned it with black pepper and lemon juice.
I also added some rocket leaves with a drizzle of balsamic vinegar on the side.
