High in protein and healthy fats, this sauce is perfect for drizzling over my Prawn Pad Thai or dipping sweet potato wedges in. This combination makes a great portable snack!
For the dressing:
2 tbsp crunchy peanut butter (I like to use Meridian)
Juice of 1/2 lemon
1/2 tsp ground turmeric
1/2 tsp curry powder
1/2 tsp ground ginger
1 tbsp Tamari soy sauce
Mix all the ingredients together except for the water. Add the water bit by bit, stirring to create a creamy texture, adding more water depending on how runny you want it.
