Sweet potatoes become deliciously gooey and caramel-like when they are baked, and unlike white starchy potatoes, they count towards one of your 5-a-day, so you’re getting a portion of veggies as well as some chunky chips! They also make a great snack and are even better when paired with my creamy peanut dressing or as a side to fish.
4 small sweet potatoes
1 tbsp coconut oil
Pinch of smoked paprika
Pinch of ground cayenne pepper
Salt and pepper, to taste
1.) Preheat the oven to 180°C fan.
Add the coconut oil to an ovenproof dish and pop into the oven for a couple of minutes to melt.
2.) Chop the sweet potatoes into wedges (or just halve them) and add to the baking dish, tossing to coat in the oil.
3.) Season and coat them un the cayenne and paprika. Bake for 45 minutes – a bit longer if you want them to be more crispy..
