This is a refreshing summery drink to help you keep cool on hot days – I like to think of it as a healthier version of Pimms!
Add a handful of raspberries if you have more of a sweet tooth, or a handful of spinach (I should warn you that too much greenery will turn the lovely pink colour brown, although it shouldn’t affect the taste!)
1/4 cucumber, chopped
Juice 1/2 lime
Handful of fresh mint
1 cup coconut water
Method: blend everything together, serve over ice and enjoy!
