Nectarine, feta and walnut summer salad 

This reminds me of big family salad bowls where Dad would add in various fruits, depending on what was in season. It’s the perfect summer salad; light and refreshing, and high in healthy fats from the feta and walnuts (good skin food!). The juicy nectarine and balsamic vinegar give the salad a slight sweetness and the toasted sesame oil gives it a lovely nutty flavour. Best enjoyed outside with plenty of sunshine.

Serves 1

Ingredients:

1 baby gem lettuce
1 nectarine (Peaches work well too)
¼ cucumber
1 spring onion
2cm-wide block feta cheese
Handful of walnut halves
1 tsp toasted sesame oil
1 tsp balsamic vinegar
Wedge of lime, to serve

Method:

1.) Tear the leaves off the baby gem lettuce and arrange them in a bowl. Then use a julienne peeler to create thin ribbons of cucumber, adding this to the bowl.

2.) Chop the spring onion, slice the nectarine and add to the salad.

3.) Crumble up the feta and break up the walnut pieces, then scatter these over the salad.

4.) Drizzle the toasted sesame oil and balsamic vinegar on top. Serve with the wedge of lime squeezed over.
