Parsley & cashew nut pesto

I love pesto, it can be drizzled over salads, mixed in with courgetti and enjoyed my favourite way: spooned over my Green Goodness Bowl.

Ingredients:

1 large garlic clove

2 large handfuls parsley

2 tbsp. lemon juice

25g cashew nuts

150ml extra virgin olive oil

Method:

Put everything into a food processor and blend until smooth. Store in the fridge and eat within a few days. For serving ideas, have a look at my Green Goodness Bowl. Enjoy!
