Zingy Guacamole

I made this the other day for my first ever lunch party and it actually just came about by (literally) mashing together the ingredients. There are so many variations, but this one only requires 3 ingredients and minimal effort. It takes only minutes to make, so I’ll often add it to my Green Goodness Bowl for breakfast. The lime juice gives it a beautiful zingy flavour and it works really well with sweet potato wedges and roast vegetables.

Makes 1 bowl

Ingredients:

2 avocados

Juice of 1.5 limes

Pinch of pink Himalayan salt

1/2 fresh red chilli

Fresh coriander, to serve

Method:

Scoop out the avocado flesh and add to a bowl with the salt and lime juice. Mash it until it reaches your preferred consistency- for a chunkier version, finely chop the avocado instead.

Slice the red chilli and top the guacamole with the chilli and fresh coriander. Enjoy!
