Cheesy sweet potato scramble

This is not the most attractive dish, but it doesn’t take long to make and it’s real comfort food that won’t leave you feeling heavy and uncomfortable afterwards.

Serves 1


1 small sweet potato, spiralised or grated in a food processor

40g frozen peas

40g frozen sweet corn

20g cheddar cheese, grated

2 eggs

Small knob of butter


1.) Steam the sweet potato “noodles” for 5 minutes. Set aside.

2.) Steam the frozen peas and corn for 5 minutes.

3.) Melt the butter in a saucepan. Add the sweet potato noodles, peas and corn and crack the eggs in, stirring quickly to scramble them in.

4.) Add the grated cheese and cook until the eggs are no longer clear and liquidy.
