We had a delivery from Riverford the other day containing all kinds of berries as if to remind us that, despite the weather being in denial, it is actually still summer. I thought it would be a good idea to make the most of it, so came up with this lovely jammy compote. You can use it for dolloping over quinoa porridge, or spreading over banana bread. Don’t worry if it appears quite runny before adding the chia seeds, as these absorb masses of liquid to form a gel-like consistency.
Makes 1 jar
75g strawberries, quartered or roughly chopped
Juice of 1/2 orange
1/2tsp vanilla extract
2tbsp chia seeds
Add everything except for the chia seeds to a saucepan and bring to the boil.
Cover with a lid and simmer for 5 minutes until the fruit is soft.
Remove from the heat, stir in the chia seeds and leave for at least 20 minutes to thicken.
Store in the fridge. Enjoy!
