I love mincemeat, but when I came across the ingredients of the kind you buy in supermarkets, I was appalled; the first ingredient was sugar, and glucose-fructose syrup also appeared a few times. This recipe doesn’t use any added sugar or sweeteners, because the dried fruit is a source of concentrated sugar, and is therefore very sweet naturally. It’s also perfect for any vegetarians/vegans as, unlike the traditional version, it doesn’t use beef suet. This recipe fills 2 jam jars- I use one to make my Merry Mince Pies, and the other to make my Mince Pie Zoatbowl.
Ingredients:
75g raisins
75g currants
75g dried cranberries
75g dried cherries
Zest and juice of 1 orange
Zest and juice of 1 lemon
1 large apple (about 150g), finely diced
1tbsp coconut oil
Thumb-sized piece fresh ginger, peeled and grated
1tsp ground cinnamon
1/2tsp ground allspice
Method:
Add everything to a large saucepan and bring to the boil. Cover with a lid, reduce the heat and simmer gently for about 8 minutes, stirring every couple of minutes until the mixture is soft and sticky.
Transfer to a sterilised glass jar and leave to cool before putting in the fridge.
