This is the ideal breakfast for the festive period; it’s a giant spicy, zesty, warm, Christmassy hug-in-a-bowl. It’s free from refined sugars, sweeteners, gluten and dairy, it’s rich in protein and it even includes a portion of green vegetables (I’ve said it before, and I’ll say it again for you sceptics; you can’t taste it!) I’ve used my own homemade Merry Mincemeat to create a healthy Mince pie-inspired breakfast bowl.
Note 1: If you’re vegan or you really can’t stand the idea of using an egg, swap it for a scoop of unsweetened protein powder (such as whey, pea or brown rice protein).
Note 2: If you’re not used to this way of eating, you might prefer to add a dash of maple syrup to sweeten.
30g porridge oats
1 medium courgette, grated (about 120g)
1 egg, beaten, or 100g egg whites, 1 scoop protein powder, mixed with 50ml water to make a runny paste instead. (Making a paste first stops you from getting all those nasty grainy lumps and makes it extra creamy)
1tsp ground cinnamon
1/2tsp ground ginger
1/3tsp ground allspice
150ml almond milk
1 large spoonful of my Merry Mincemeat
1tbsp almond butter, to top
Desiccated coconut, to top
1.) Add the grated courgette, oats, almond milk ad water to a pan and bring to the boil. Reduce the heat and simmer until most of the liquid has been absorbed.
2.) Stir in the protein paste or the egg into the pan – quickly if using the egg – you don’t want scrambled egg! Continue to cook for a further few minutes until it reaches a creamy consistency.
3.) Add the spices and pour the mixture into a bowl, swirl in the almond butter and top with the mincemeat and desiccated coconut. Taste and see Note 2 if you find it needs sweetening.
