It’s that time of year again; the Great British Bake Off is back. To celebrate the launch of our much-loved GBBO, I’m collaborating with Doisy and Dam to create a cake using their delicious chocolate in honour of Cake Week. Enter the Orange and Goji Chocolate Chip Cake.
Chocolate chip cookies are a well-known treat, while chocolate chip cakes are a less common but just as tasty treat. But instead of using plain chocolate and plain sponge, I’ve focused on the flavours in Doisy and Dam’s delicious goji and orange chocolate and combined them in the cake mixture as well for a zesty, sweet yet chocolatey hit. The ganache has a slightly unusual ingredient, but I assure you that you won’t taste the hidden black beans; they just give it a nice thick and mousse-like texture. This cake is free from gluten, grains and is mostly free from refined sugars. It’s also very nutrient-dense, so a little goes a long way!
