I am a dark chocolate fiend. I can’t go without having a bit of chocolate each day. Also, dessert is unlikely to fully satisfy me unless it has a chocolate element to it. I came up with the recipe for these brownies when, in a desperate bid to escape from the long and lengthy process of preparing for the exam I had the next day, I decided to experiment in the kitchen.
Now, I will start by saying that these are not like a ‘real’ brownie. I won’t lie to you; if you’re hoping you’ll be able to eat this and mistake it for the real deal, then you may well be disappointed. If a realistic yet ever-so-slightly more nutritious version is what you’re looking for then you’d be better off giving my Fudgy Chocolate Brownies or my Vegan Chocolate Brownie Pudding a go.
But, let’s not be hasty – I don’t want you to write these bad boys off. I had never tried sweet potato brownies before, so when I found myself with an excess of sweet potatoes, I baked them up and transformed them into these squidge-y chocolate-y squares. Did my flatmates think I was a little bit weird? Yes. Did I care? No because these were worth the weird looks.

||GOOEY (and healthy!) PROTEIN BROWNIES|| ~ ~ Ever since I was about 10, I've had a "bad" habit where I respond to the realisation that I have an exam the next day by baking. I agree that the logical response would be to revise for said exam, but hey, at least if the exam goes badly, I'll have cake 🌚💁🏼 I'm not much of a recipe person, I'm more of a I'll-stick-all-these-ingredients-together-and-see-what-happens kind of person & about 80% of the time it turns out well 🤷🏼♀️ These were part of the 80%! Gooey sweet potato chocolate brownie squares 🍠🍫 Free from gluten, grains + refined sugars (I've put dairy-free alternatives in the ingredient list). Here ya go: ~ ~ * INGREDIENTS: ~ ~ * 75g @thatprotein vegan cacao protein powder 🍫 * 1tbsp cacao powder (you may want to use more if you're using a different chocolate protein powder as the one I've used contained quite a bit more cacao) * Approx. 2 medium-sized baked sweet potato (should yield approx. 275g flesh) 🍠 * 150ml almond milk * 4.5tbsp agave or maple syrup 🍁 * 1/4tsp bicarbonate of soda * 65g skyr or Greek yoghurt (or dairy free alternative, such as soy/almond yoghurt) * 1 egg 🥚 * 100g egg white * 40g dark choc buttons, plus extra to top (I used @williescacao chef drops) 🍫 ~ ~ * METHOD: ~ 1.) Preheat the oven to 160^C (140^C fan) and grease + line a baking tray. ~ 2.) Remove the skin from the baked sweet potatoes and mash the flesh in a bowl until smooth. ~ 3.) Add all of the other ingredients except for the chocolate buttons and mix until smooth. (Can also use a food processor for a smoother consistency). ~ ~ 4.) Stir in the chocolate buttons and pour the mixture into the lined baking tray. Top with extra chocolate buttons and bake in the oven for 24-26mins until the surface begins to crack but the inside remains gooey. ~ Store in the fridge & eat within a few days but unlikely they'll last that long 🌚 Enjoy!
